Healthy Citrus Dressing (with grapefruit)
This all-natural Healthy Citrus Dressing is tart, sweet, and bursting with all the aromatic citrus notes. All you need is a hand-held juicer, a bowl, and a whisk—no fancy blender or equipment needed.

- 75 ml grapefruit juice a small one about the size of an orange
- 2 tbsp lemon juice about one lemon
- 2 tbsp mandarin oranges about 1-2 mandarins
- 2 tbsp honey may use pure maple syrup for vegan
- 100 ml extra virgin olive oil
- 1 tbsp finley chopped parlsey
- salt and pepper to taste
First squeeze out the juice from the lemon, grapefruit, and mandarins. Adding the zest of one lemon is optional.
Then, add the honey, parsley, salt, and pepper. Mix to combine.
Next, while whisking the citrus juice, slowly drizzle in the olive oil. Whisk your heart out until fully homogenized. Stop once a pale yellow-ish color is the result.
Pour over a salad, marniate chicken, or drizzle over baked fish. Enjoy!
